Three ingredient chocolate hazelnut cookies

Chocolate hazelnut spread, an egg and flour—yeah, it’s seriously that simple

If there’s one dessert I could eat for the rest of my life, it would be cookies. I know, it’s a bold statement; perhaps even a little controversial. But think about it, there are so many variations of the yummy treat—classic chocolate chip, no-bake peanut butter, even vegan beet red velvet. With cookies, you simply can’t go wrong. And today, I bring you one of my favourite cookie recipes that can be whipped up just as quickly and easily as it takes to devour them.

All you need for the simple baking endeavour is three ingredients: a jar of chocolate hazelnut spread, an egg and flour. And the best part, you likely already have everything you’ll need at home. This means you won’t have to venture to the grocery store whenever you’re craving a decadent treat.

To begin, add your choice of chocolate hazelnut spread to a large bowl. Nutella, Kraft’s hazelnut spread and NutJar’s hazelnut chocolate spread are all great options. Whisk in one whole egg until both the chocolate spread and egg are thoroughly combined.

Next, slowly mix in the flour. You’ll want to keep folding in the dry ingredient until a dough starts to form. I prefer to chill the dough for at least 20 minutes in the fridge to make the cookies easier to roll. However, if your dough feels firm enough and you don’t mind having sticky fingers afterwards, you can skip this step.

Using a cookie dough scooper, scoop out one-inch balls and place them on a parchment-lined baking sheet about an inch apart. You should be able to make 20 balls. To indent the centre of the cookies, you can use your thumb or the back of a wooden spoon. I prefer the latter, but the choice is completely yours to make.

Once the cookies are all indented, place them in an oven at 350°F to bake for 10 minutes or until they are firm on the outside. Let the cookies cool completely before filling the centres with a generous scoop of more chocolate hazelnut spread. I find that a little spoon is the easiest way to top the cookies with the spread. 

Now, you can certainly leave the cookies as is and enjoy every scrumptious bite. Or, you can take the cookies up a notch and sprinkle on any toppings you’d like. I love walnuts on top for a crunchy element, but the options are truly endless—think sprinkles, mini chocolate chips or shredded coconut. You can even substitute the filling in the centre of the cookie for a spoonful of peanut butter. That way you get a mouthful of chocolatey peanut butter goodness in every bite. Whatever your choice, don’t be afraid to experiment. Let your creativity shine!

INGREDIENTS

COOKIES:

1 cup of flour
¾ cup of chocolate hazelnut spread
1 whole egg

FROSTING:

4 tbsp of chocolate hazelnut spread (this is a rough measurement, feel free to use as much spread as desired)

Optional Ingredients:
Chopped walnuts or any other choice of topping

INSTRUCTIONS

  1. Preheat oven to 350°F. In a large bowl, combine whole egg with chocolate hazelnut spread. Whisk together until thoroughly combined. 
  2. Slowly incorporate the flour into the mixture. Fold in until well combined and a dough starts to form. Chill the dough for at least 20 minutes in the fridge.
  3. Using a cookie dough scooper, spoon out one-inch balls and place them on a parchment-lined baking sheet a few inches apart. Indent the centre of the cookies with your thumb or the back of a wooden spoon. 
  4. Bake for 10 minutes or until the cookies are firm on the outside.
  5. Let the cookies cool completely before filling the centres with a generous scoop of chocolate hazelnut spread. Sprinkle on any toppings of choice; walnuts, sprinkles or shredded coconut are all good options. Serve and enjoy!
